Food & Function Issue 7 is now online and features work on the front cover from Arne Heyerick and co-workers from Ghent. This study, ‘Bioavailability of hop-derived iso-α-acids and reduced derivatives’ focuses on the bioavailability of bitter acids, prominent in hops and beers, in rabbits, and shows exposure levels in line with bioactive concentrations previously suggested.
